I’m pretty sure you can’t run a commercial kitchen out of your home. Getting FDA or whoever approval to sell food items is a labyrinth - I’m not a paperwork guy, admittedly, but just the process seemed daunting to me when i went through it with a client just before the pandemic. I’d look into “commercial kitchen” rental spaces. They’re pretty turnkey and have done the legwork for you.
I wish i had an answer for you, but it’s happened to me and I HATE it. I just want to give someone money for a thing that they do and they don’t want to take my money to do the thing. Mechanic? No problem, go elsewhere. Custom case manufacturer? Not as easy to accomplish!
Step 1: get a lawyer. Your country/state/province will have specific ways to do this that nobody on reddit can tell you about from a one-sentence post.
Like a pharmaceutical company? Construction? A brothel? A mechanic’s shop? A Christmas Tree Farm?

Sounds like you’ve got it. If he wants to make money for you for free, that’s his prerogative, of course, but you’re on target with getting a contract for the work expected and its ownership. Once he sees it as “making money for some other guy with no financial recompense,” he’s likely to want to get paid commensurate with the value he’s providing, but you never know. Maybe you’ll get lucky!
