I want to open a restaurant only for fried chicken and it’s going to be with three different sides. When do I have to close my restaurant if it will not work out? How long it take to know the business is working? I totally understand it depends on location but if the location is not very busy.

    With such a limited menu, you might consider a pop-up before going full bore on a restaurant. Build your following and work out the issues.
