I want to open a restaurant only for fried chicken and it’s going to be with three different sides. When do I have to close my restaurant if it will not work out? How long it take to know the business is working? I totally understand it depends on location but if the location is not very busy.

    With such a limited menu, you might consider a pop-up before going full bore on a restaurant. Build your following and work out the issues.

    Generally speaking, it may take two years or more for a small business to reach maturity sales volumes.

    My rule of thumb is business should reach 50 percent of sales projections by around the sixth month of operations.

    It is possible for stand-alone fried chicken restaurant to prosper.

    In my home town, there is a little fried chicken outlet (broasted) that has been in business for decades.

    Where I live now we have Ya Ya’s flame roasted chicken since 2009. Main sides are green salad with buttermilk dressing and mashed potatoes and gravy plus coleslaw, baked beans, rice, or veggies.

    You need to deliver high quality product, consistently, and it really pays to be owner/operator.
