Google merchant center is for submitting your product feeds which then become part of your product listing ad campaigns, which are effective. I am not familiar with Google manufacturer center, though am investigating now that you brought it up.
Google Merchant Center is used to sell products online through Google’s network. Like when you google a product and you see the products under the “shopping” tab.
Do you think this means that Merchants who register are using keyword research to decide what products they register in their Google Merchant Center?
Not necessarily, but You’ll definitely run into products optimized for keywords. It’s best to do that.
I setup my Ecom store on WooCommerce (wordpress) or shopify and then sync my products to Merchant Center.

It is basically to tell Google what you are selling. Think of it like your warehouse/inventory.
